Copper Kitchen, Bar & Rooftop has always stood for more than just dining. Set within the lush embrace of Bisma Eight Ubud, Copper has long served as a rooftop stage for culinary storytelling — where seasonality, heritage, and creativity converge. We’re proud to introduce our new Executive Chef, Julio “Jo” Petrus — a passionate craftsman whose culinary journey spans over 13 years across luxury hotels, fine dining restaurants, and private experiences throughout Southeast Asia and the Middle East.
A Heritage of Flavor and Finesse
Born in West Sumatra, Chef Jo brings with him the warmth and complexity of his Batak and Minang roots. His approach to cooking is deeply personal — a rich fusion of cultural memory, refined technique, and intuitive hospitality. Every plate he creates is an intersection of bold flavor, clean elegance, and heart.
His professional journey has included senior positions at Hilton Bali Resort and Marriott International, where he led high-performing teams and elevated large-scale events with both operational precision and artistic flair. He has worked alongside Michelin-trained chefs, developing a culinary voice that is both globally fluent and uniquely grounded.
